The smell of pandan has been classified as floral, sweet, grassy, and slightly sweet. It regularly has a slight scent or flavour. It is recognized as pandan or pandan wangi (fragrant pandan) in Singapore, Malaysia, Indonesia, and the Philippines. The green juice harvested from its leaf is popularly used in Malaysian cuisine and Indonesian cuisine as a green colourant and flavouring agent that gave kue, tapioca, flour, or yeasty rice-based classical cakes; which include klepon, kue putu, dadar gulung, lapis legit, pandan cake, buko pandan salad, and buko pandan cake—a delightful aroma. Besides that, to amplify the perfume of the pungent coconut rice, a tied knot of crushed pandan leaf is incorporated. 
 
It is classified as rampé and is nearly a common food in Sri Lanka. These leaves and curry leaves are found in the majority of Sri Lankan meals for flavour. In Bangladesh, it is identified as pulao pata, and in the Maldives, it is called ran'baa along with the other variant of pandan there. It is used to enhance the flavour of pulao, biryani, and sweet coconut rice pudding, or payesh if basmati rice is not used. In India, it is classified as Annapurna leaves. Traditionally, unfragrant rice can be used and the dish still tastes and smells like basmati, it provides a decently priced alternative for basmati fragrance. In Asian grocery stores in regions where the plant doesn't grow, the leaves are distributed in a frozen state and can be used fresh or dried. In many Asian cultures, primarily in rice dishes, desserts, and cakes, they are utilized as a flavour enhancer because of their nutty, botanical perfume. 
 
To add flavour to the cuisine, the leaves are infrequently steeped in coconut milk. They may be brought together and cooked with the meal. They could've been made into a rice-cooking pot dubbed a basket. A dish termed pandan chicken is constructed of fried broiler chicken parts that have been wrapped in pandan leaves; As a flavouring for sugary beverages and desserts like pandan cake, the leaves are also applied. In some coconut milk-based dishes and desserts like buko pandan, Filipino cuisine incorporates pandan as a flavouring.
