It is pretty sure that you have tasted the ‘OG’ Curry Wonton Noodles, the stringy egg noodles that are served with the hot rich and deep flavour of curry broth. It is becoming an all-time favourite for most people that are into spices food. But, have you ever tasted the dry version of wonton curry noodles before? The taste is quite the same as the soupy curry wonton noodles. However, the only difference between these two dishes is the existence of the broth itself. Just like its name, ‘Dry’ wonton mee is served dry just like the stir fry wonton noodles with the rich curry flavour within it. The recipe style is quite the same as this Chinese food named “Lo Mein”, which means Chinese egg noodles stir-fried with soy sauce and other additional ingredients. This KI.TA’s dry curry wonton noodles are very suitable for those who love to eat fried noodles together with fried wonton.

Our brilliant Master Chef, Bernard Lee, is the one who came up with this wonton mee recipe. This recipe was unintentionally created by him during the COVID-19 outbreak in 2019. Due to inadequate food storage during the pandemic, Chef Lee noticed that there is an increase in demand for foods with a long shelf life, such as instant noodles. Thus, he had the spontaneous notion to create one recipe— KI.TA's wanton mee series—would satisfy the demands of the people at the time.

You will need a variety of culinary ingredients, such as curry paste, dried chillies, garlic, curry leaves, etcetera, to make the best dry curry wonton noodles. They are rather unusual in the UK, hence the costs are typically substantially higher and acquiring them is indeed very difficult. Even if you got to these ingredients, preparing the perfect dish requires the right techniques and time-consuming steps. By using our dried wonton noodles, you can bypass all of these steps. No need to spend money on expensive, fresh products or painstakingly prepared meals. COOKING WITHIN 2 MINUTES
it just takes two minutes to prepare the KI.TA's Dry Curry Wonton Noodles. Firstly, add dry wantan mee into the empty pot after it has been filled with water. Place the pot on the stove and turn on the fire. Let the egg noodles come to a boil for two minutes. When the allotted time has passed, filter the cooked noodles in the colander and then leave them to rest for a while. You could have the condiments prepared on the plate. You check the noodles until all the extra water has drained out. Unseal the paste and vegetable oil with scissors, then place them on the platter. As a result, KI.TA chose to switch the animal oil for pure vegetable oil, which is a healthier and safer alternative for a condiment.

125G OF WONTON NOODLES; STANDARD COFFEE SHOP PORTION SIZE
Coffee shop portion quantities of wonton noodles measuring 125g (4.40oz) are included in a pack of dry curry wonton noodles from KI.TA. All-fresh quality eggs are used in the production of the wonton noodles, which are then dehydrated and weighed before being put into the transparent, airtight plastic sachet by the machinery.

10 SIGNIFICANT PROCESSES WHEN DEVELOPING KI.TA’S DRY CURRY WONTON NOODLES

INCOMING KITA'S WONTON NOODLES INGREDIENTS INSPECTION
Each ingredient that was received from our storehouse will first be examined and chosen by the KI.TA's QC (Quality Check) team. We will use these chosen ingredients to produce wonton noodles after the inspection is done. We will meticulously check these ingredients during the inspection process, examining the packing of the raw ingredients, visual inspection (damaged/spoiled), dimension verification, and many more.

AUTOMATED WONTON NOODLES INGREDIENTS WEIGHING PROCESS
We will use an automated weighing machine to weigh only the ingredients that passed inspection. Additionally, in order to ensure accuracy and reduce ambiguity during the weighing procedure, we standardized the weighing instrument prior. Each ingredient used to make wonton noodles must remain within the KI.TA-specified weight class.

UTILISING A MACHINE TO MIX THE WONTON NOODLES DOUGH
The ingredients are well mixed in this step to produce the best wonton noodle dough. We will employ the industrial stand mixer to combine all of the essential food ingredients. We choose to deploy automation in place of human labour. We're implementing these steps in order to make a lot of wonton noodles. Therefore, using a mixer machine may speed up the process, guarantee that the product is thoroughly mixed, and significantly boost productivity.

AUTOMATIC ROLLER MACHINE FOR THINNING THE WONTON DOUGH SHEET
The mixed dough will be gathered by the dough sheeter machinery to start the thinning process. Thinning a large amount of dough at once can impair the gluten structure of the dough and degrade the quality of the egg noodles. Hence, we only utilise this method on a specific amount of wanton mee dough at one time. We also decided to thin the noodles fixed to 70% of their original thickness in order to improve their quality. Additionally, the dough will be dusted during the process to prevent it from sticking together while being flattened and sliced. The egg noodle dough will be transferred to the cutting mechanism after being thinned.

CUT THE DOUGH SHEETS INTO WONTON NOODLE STRINGS
Once the thinned noodles have entered the cutting machine, the dough sheets will be cut into the desired measurements of wanton mee strings. Since the dough was previously dusted during the thinning process, cutting the dough is considerably easier and quicker.

WEIGHING THE PURE EGG NOODLES STRINGS
After the cutting phase, the noodle strings will go through another round of weighing. The egg noodle strings will be weighed in exact proportion to the 125g (4.40oz) unit weight of the Dry Curry Wonton Noodles by using the weighing machine.

EMPLOY WONTON NOODLES DEHYDRATOR TO REDUCE THE MOISTURE
To remove the moisture from the egg noodles, we decide to dehydrate them using the dehydrator machine. By doing this, we can make sure the absence of liquid inside, as well as halt the growth of dangerous microorganisms or pathogens inside the product. Additionally, it will aid in extending the mee of the wantons' shelf life.

MACHINERY PACKING THE KI.TA’S WONTON NOODLES

The condiments were put into two small, clear plastic sachets using an industrial sachet filling machine. We carried out the procedure one at a time for cleanliness and also to control the wonton noodles' level of sanitation. After that, a packet containing both the sachets of noodles and seasonings will be sealed. We opt to solely use our trained human labour for this process to make sure that the boxes are folded and packed correctly so that the products will be secured. Any errors found during this production process will be immediately discarded.

As for consumer labelling purposes, the Halal logo is present on the product's front, more notably on the box's bottom left corner. The ingredient list and nutritional information are located on the left side of the product package.

Since all of the ingredients used to create the dry curry wonton noodles by KI.TA are pork free and in compliance with Syariah law, all of their Asian cuisine products are recognised as Halal food products.

Hazard Analysis Critical Control Point (HACCP):
In order to obtain the HACCP accreditation, KI.TA decided to pass a few tests on the biological, chemical, physical, and radioactive hazards. This is because of KI.TA is very concerned about the standards for the product's quality and the safety of its customers while consuming the wonton noodles.

SAUCE & OIL SACHET

To protect the sanitary of the wonton noodles and food safety, we have divided the condiments into two separate sachets.

All of the wonton noodles series, including Dry Curry Wonton Noodles, may be regarded as a top quality food products. This is because of KI.TA strictly conforms to the high standard of product manufacturing in order to gain GMP accreditation.
SHIPPING INFORMATION WITH WONTON NOODLES
Orders will be packaged by the KI.TA production team in a carton box that measures Length 405mm x Height 265mm x Width 338mm (15.94in x 10.4in x 13.30in). HOW TO COOK KI.TA’S DRY CURRY WONTON NOODLES
Depending on their cultures and origins, gourmet chefs employ a variety of culinary skills. Master Chef Bernard Lee of KI.TA also incorporates flavours from Nyonya and Peranakans culture in this dish. So here is his recipe and method for making authentic dry curry wonton noodles.

THE INGREDIENTS NEEDED TO PREPARE KI.TA'S DRY CURRY WONTON NOODLES ARE AS FOLLOWS:
One pack of KI.TA’s Dry Curry Wonton Noodles
A half pot of water
A few sliced BBQ chickens (optional)
Half a lime (optional)


DRY CURRY WONTON NOODLES PREPARATION:
First, carefully pour the water into the pot while it is still on the fire. Turn on the stove's heat and wait for it to boil.
When the water begins to boil, take the noodles from the KI.TA dry curry wonton noodle packet, place them in the pot and cook for two minutes.
After two minutes, turn off the heat and thoroughly drain the wonton noodles in a colander.
Grab a plate, unsealed the condiments and place them on it. Take the strained noodles and lay them on the plate after that. Mix them all together.
Squeeze some lime juice on the wonton noodles to taste. Serve the wonton noodles together with sliced BBQ chicken. Now that you're ready, enjoy the meal!
